If you love pizza, but you’re watching the carbs, cauliflower crust is the perfect solution. Blanch ½ cauliflower broken intoflorets for 4 minutes, then drain really well. Blitz in afood processor until it looks like breadcrumbs. Tip into a bowl with 1 beaten egg and 100g grated parmesan and season. Mix until combined. Spread onto a lined baking sheetand press into a pizza shape. Bake at 200C/fan 180C/ gas 6 for 15 minutes, or until crisp and golden. Add a tomato sauce then a topping of your choice with cheese, and put back in the oven until the cheese is melted and golden.
